Ingredients:

2 Tbsp. Olive Oil

1 Medium sized diced onion

3 Garlic Cloves minced

4oz tomato paste (A little less than a can)

1/2 tsp. Crushed red pepper

2 diced Tomatoes (Can substitute for canned)

1 can of Chicken broth

8oz of Pasta

4 pieces of breaded chicken

1/2 cup of Parmesan cheese

1/2 cup of Mozzarella cheese

1/2 tsp. pepper

 

Directions:

1. Add 2 tbsp of olive oil to a pan over medium heat cook onions about 6 min until golden brown.

2.Add garlic and cook about a minute longer.

3. Add Tomato paste, crushed red pepper, diced tomatoes.

4. Add chicken broth and raise heat to medium – medium high until the sauce is simmering.


5. Add pasta and cover. cook al dente (about 8 minutes). Stir it about every minute.

6. Chop chicken up into strips and mix in.

7. Add mozzarella and Parmesan cheese and mix it in.
