Ingredients:

1/2 cup of rice

1 thinly sliced green onion

6 Tbsp. soy sauce

3 Tbsp. brown sugar

1 1/2 Tbsp. Butter

1 Tbsp.  Crushed red pepper

2 eggs

1 medium-sized green zucchini halved and sliced

1 medium-sized yellow squash halved and sliced

32 Large raw shrimp

approx 3 tablespoons olive oil

Directions:

  1. Preheat the oven to 450F
  2. Cook the rice. I steamed mine to make it a little healthier, but it could also be fried.
  3. Mix the soy sauce and the brown sugar in a small bowl, set aside.
  4. Melt the butter in a frying pan add crushed red pepper.  Scramble the eggs in the same frying pan.  Mix the eggs and chopped green onion into the rice.
  5.  Get 4 pieces of foil about 1 foot long.  Fold the corners up on the foil.  Add the zucchini, squash, and shrimp.  Drizzle each with olive oil and the brown sugar/soy sauce mixture.
  6.  Wrap each packet up and place in the oven for 15 minutes.  Take them out of the oven, evenly distribute the rice into each packet, mix the packets up and place back in the oven for 15 more minutes. You will know it is ready when the shrimp are all the coral pink color.
