This is one of the easiest most delicious recipes.  If you want you can eat it like Chili otherwise I like to strain it and use it as burrito fillings.

Ingredients:

1 can chicken broth

1 can of white northern beans

1.5 cups of Salsa verde or if you’re not obsessed with salsa verde like me and have the jug just a small jar of it.

1 onion diced

2 large chicken breasts

3 garlic cloves

1 teaspoon black pepper

1 tablespoon cilantro (fresh is better but I was out)

1 tablespoon Chili powder

1 tablespoon Cumin

Optional ingredients for topping:

Shredded Mexican or Taco cheese

Sour Cream

Lime

Throw everything in a crockpot on low for 4 hours.  Shred the chicken and let sit another two hours. I usually wait to put the onion in until I shred the chicken because I like them a little less cooked.   Serve with Cheese, sour cream, and Lime if you would like. 🙂

I could have let it strain a little longer… but I couldn’t wait to eat it.
